That's how our story began. A call to the impossible,an invitation to become pioneers who would bring Texas its very first cheese cave.

 

Now, the test of time speaks through each wheel of aged raw milk cheese and the national awards we've won along the way. And that's what makes our story( and our cheese of course) worth sharing with friends and family around the table. 

Deep beneath Texas soil lies roots of a heritage that started with a family, a dairy herd, and a dream. Today, that dream has matured into something extraordinary: Texas' first cheese cave, where Old World tradition flourishes in an unexpected place. Seventeen feet underground, our 6,000-cubic-foot cave maintains the perfect conditions that European artisans have trusted for centuries. Here, time transforms our raw milk cheeses, developing complex flavors through authentic cave aging that mere refrigeration aging cannot replicate. What started as a simple solution for surplus milk has blossomed into an award-winning artistry that challenges everything people thought possible about Texas cheesemaking. Every wheel we age, every class we teach, and every experience we share carries forward a legacy of craftsmanship that connects family, land, and tradition.

Our collection represents the finest in artisanal cheesemaking. From our rare raw milk Brie, celebrated multiple times by the American Cheese Society, to our nationally awarded Smoked Gouda – each cheese tells its own story of patience and precision.

Italian-style cheese with a bold but not overpowering kick! Instead of taking over, the type of heat highlights the nice flavor of the pepper.

Smoked for 24 hours & aged for a minimum of 4 months to deliver an amazing natural smoke flavor!

Italian-style cheese. Strong earthly flavor with hints of Spanish Asiago and mild Swiss.

Award-winning Mediterranean soft cheese made from low-temp pasturized  cows milk yogurt. Spiced with fresh garlic, parsley and salt and marinated  in olive oil with peppercorns, fresh herbs and dried red pepper.

In our classes, you’ll learn through hands-on experience how to turn fresh raw milk into variety of tasty cheeses both soft and hard.  Everthing from yogurt, cottage cheese, ricotta and mozzarella to cheddar, gouda, colby jack and parmesan.
